I was surprised when I enjoyed every single meal on my Tulum trip. I’m a healthy eater, but as you know if you’re a regular reader, I enjoy everything in moderation. AKA I like my sweets .
The Shambala Petit Hotel, where we stayed, served us three meals daily. All were made from scratch, and actually pretty simple to make at home, making me wonder why we resort to “fast food” so often when it’s relatively affordable and convenient in itself to eat clean and healthy.
This potato mixture was probably one of my favorite parts of a meal. It’s mad with potatoes, peppers, cheese, and I forget what the green mixture on top is but it was delicious all together!
At every meal, we were served a fresh juiced veggie or fruit drink. This was celery water. I enjoy celery with peanut butter, but usually not alone, so when I actually enjoyed the celery water I was surprised. Definitely worth a try at home!
I’m a carb lover. Wait – I’m a starch lover. So I enjoy indulging in pastas quite frequently! I thought this was a fun and simple alternative to the carbo loading meal. Veggie Lasagna. Made with zucchini, cucumbers, and tomato, and topped with a homemade tomato sauce and cheese. SO AMAZING.
Every night at dinner we were given a fish fillet with a unique sauce. Most of which included onions, chives, and olive oil. Simple yet delicious! And the fish was freshly caught and cooked.
I’m a huge fan of coconut water, but I had never tried it out of an actual coconut, so when the hotel decided to hand out free coconuts, I was all over it. Tastes even better out of the actual thing! Why can’t we have coconut trees here?!
I’m certainly using this tip as a breakfast plan! All fruit! I never would have thought a meal like this would have held me over until lunch, but it did. SUPER simple and fresh! Try it!
