I will share the rest of my Tulum trip with you I promise! But I just had to share this recipe for an amazing sauce I made for my fish the other night. I honestly didn’t think it was going to turn out to taste that great, but it is definitely going to be something I make as a staple from now on.
I picked up some flounder fillets last week and threw one on the grill.
While it grilled, I cut up a few slices of tomato and chopped them along with a slice of a yellow onion.
I poured about a cup full of olive oil into a small pot with the tomato and onion.
Sprinkled a few sprinkles of garlic powder and pepper into the mix until the onions and tomatoes are soft, and pour over the grilled chicken!
Seriously, the picture doesn’t do it justice.
