If you’ve been following me on twitter and Instagram, you may know I promised this “recipe”. It’s really pretty easy to make slash throw together for an easy healthy lunch.
Originally, I got the idea to make quesadillas from Shape Magazine when I made their recipe, using beans, avocado, cheese, chili powder, and spinach.
I of course ran out of avocado and beans, so the next day I decided to try and make an easier version of the quesadillas, using only cheese and spinach on my whole wheat tortillas.
Just cut a tortilla in four, throw a little cheese and spinach on there, toss in a frying pan and voila!
It takes 5 minutes.
Super easy and tasty!
